Noodles in China have a history of over 2000 years which can be
dated back to the Eastern Han Dynasty.
Chinese noodles can be anything from wispy vermicelli-like strands
to thick broad ribbons. Some are made from rive and some are made
from wheat flour, but one thing they have in common is that they
are all very long.
The reason is that long noodles represent longevity or an unbroken
life-hence the longer the noodles the longer the life. That's why
noodles are particularly featured at Chinese people's birthday dinner.
It is said that the well-known spaghetti and macaroni in the West
were made on the basis of Chinese noodles which were introduced
by Marco Polo in the Yuan Dynasty, and the way to cook it is a improvement
based on the Chinese style.
